Apple Cinnamon Maple Muffins

Ingredients:

  • 1 small apple (finely chopped)

  • 1 tbsp Miyokos vegan butter (can use regular if eating dairy)

  • 1 1/2 cup GF baking flour

  • 2 tbsp chia seeds

  • 2 tbsp ground flaxseed

  • 1 tsp baking soda

  • 1 tsp ground ginger

  • 1 1/2 tsp cinnamon

  • 3 eggs

  • 1 tsp vanilla

  • 1/2 cup apple sauce (unsweetened)

  • 1/3 cup maple syrup

  • 1/4 cup coconut oil

Method:

  1. Preheat oven to 350f and line muffin tin with baking cups

  2. Heat pan on low-med heat and allow to heat through

  3. Once heated add Miyokos butter and let melt

  4. Saute apples in pan for 5 min. adding 1/2 tsp cinnamon halfway through

  5. Once finished set aside

  6. In a large mixing bowl add dry ingredients together and mix

  7. In a small mixing bowl add wet ingredients together and mix until smooth

  8. Add wet ingredients to dry ingredients and mix well to combine (add 1-2 tbsp of water if mixture is still somewhat thick)

  9. Scoop mixture into muffin tins and top each with apple

  10. Bake for 30 min.

  11. Let cool and enjoy!
