Apple Cinnamon Maple Muffins
Ingredients:
1 small apple (finely chopped)
1 tbsp Miyokos vegan butter (can use regular if eating dairy)
1 1/2 cup GF baking flour
2 tbsp chia seeds
2 tbsp ground flaxseed
1 tsp baking soda
1 tsp ground ginger
1 1/2 tsp cinnamon
3 eggs
1 tsp vanilla
1/2 cup apple sauce (unsweetened)
1/3 cup maple syrup
1/4 cup coconut oil
Method:
Preheat oven to 350f and line muffin tin with baking cups
Heat pan on low-med heat and allow to heat through
Once heated add Miyokos butter and let melt
Saute apples in pan for 5 min. adding 1/2 tsp cinnamon halfway through
Once finished set aside
In a large mixing bowl add dry ingredients together and mix
In a small mixing bowl add wet ingredients together and mix until smooth
Add wet ingredients to dry ingredients and mix well to combine (add 1-2 tbsp of water if mixture is still somewhat thick)
Scoop mixture into muffin tins and top each with apple
Bake for 30 min.
Let cool and enjoy!
