BALSAMIC CARROTS W/ LEMON
Ingredients:
1 bunch carrots
1 tbsp olive oil
1/2 lemon
1 tbsp balsamic vinegar
salt & pepper to taste
Method:
Preheat oven to 425f
Wash & trim carrots (no need to peel unless you want for aesthetic purposes)
Line pan with parchment paper & spread carrots out
Drizzle with olive oil & salt & pepper
Mix well with hands to ensure carrots are evenly coated
Roast for 20-25 min, until carrots start to brown
Take out of oven & let cool for 10 min
Squeeze lemon & drizzle balsamic on carrots, then toss to coat
