BALSAMIC CARROTS W/ LEMON

Ingredients:

  • 1 bunch carrots

  • 1 tbsp olive oil

  • 1/2 lemon

  • 1 tbsp balsamic vinegar

  • salt & pepper to taste

Method:

  1. Preheat oven to 425f

  2. Wash & trim carrots (no need to peel unless you want for aesthetic purposes)

  3. Line pan with parchment paper & spread carrots out

  4. Drizzle with olive oil & salt & pepper

  5. Mix well with hands to ensure carrots are evenly coated

  6. Roast for 20-25 min, until carrots start to brown

  7. Take out of oven & let cool for 10 min

  8. Squeeze lemon & drizzle balsamic on carrots, then toss to coat

  9. Enjoy!
