Charred Dijon Cabbage
Ingredients:
1/2 head of cabbage (diced)
1/2 yellow onion (diced)
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 tbsp olive oil
Dijon Sauce
3 tbsp Miyoko’s Vegan Butter
2 tbsp Dijon mustard
pinch of salt
Juice of 1/4 lemon
Method:
Heat large pan on low-med heat, allow to heat through, and add olive oil, and allow oil to heat through
Add onions to pan and saute for 5 min. then add cabbage to pan turn heat up to medium
Season with salt, pepper, and garlic powder and stir to mix
Saute together for approx. 15 min. until edges of onions and cabbage are browned
(can continue to cook if you like your cabbage more browned)
Dijon Sauce:
While cabbage is cooking, heat a small pot on low-med heat, allow to heat through, add Miyoko’s butter until it has melted
Add dijon mustard, stir, then add pinch of salt and pepper
Turn heat off and squeeze juice of lemon
Stir and taste
Drizzle mixture over cabbage
Let cool and enjoy!
