CHOPPED KALE SALAD

SERVES 4

Ingredients:

Salad

1 head lacinato kale (chopped)

  • 5 sweet peppers (diced)

  • 5 artichoke hearts (diced)

  • 1/2 cucumber (diced)

  • 1/4 red onion (diced)

  • 1/4 cup sheep’s milk feta (if eating dairy)

  • 1 handful microgreens

  • 1 tbsp olive oil

Dressing

  • 1/4 cup olive oil

  • 1/8 cup apple cider vinegar

  • 2 tbsp grain or spicy mustard

  • 1 tbsp maple syrup

  • 1 clove garlic (minced)

  • juice of 1 lemon

  • salt & pepper to taste

  • red pepper flakes to taste (optional)

Method

  1. Wash, dry, & slice kale into thin ribbons & add to large mixing bowl

  2. Drizzle 1 tbsp of olive oil onto kale & massage well with hands until kale begins to soften

  3. Wash, dry, & dice peppers, cucumber, artichoke hearts, & red onion

  4. Add all items to large mixing bowl

  5. Add all dressing ingredients into a small mixing bowl & whisk to combine

  6. Pour dressing over salad & mix well

  7. Serve & enjoy!
