Crispy Quinoa

Ingredients:

  • 1 cup quinoa

  • 2 cups liquid (bone broth or water)

  • 2 tbsp olive oil

  • 1/2 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

Method:

  1. In a small pot, pour in quinoa and liquid

  2. Bring pot to a boil, stir, cover, then turn heat off

  3. Set timer for 15 minutes. Once timer goes off, remove top and fluff with spoon

  4. While quinoa is cooking, preheat oven to 400f

  5. Line large baking sheet with parchment paper and evenly spread out quinoa

  6. Drizzle with olive oil and season with salt and spices

  7. Place pan in oven and cook for 30 minutes

  8. Once timer goes off, stir quinoa and cook another 10 minutes. Then repeat one more time for a total cooking time of 50 minutes

  9. Remove from oven and let cool. Store remainder in airtight container
