CRUSTLESS VEGGIE QUICHE
Ingredients:
2 tbsp avocado oil
1 med onion (diced)
3 cloves garlic (minced)
5 small sweet peppers or 1/2 bell pepper (diced)
5 oz spinach (chopped)
6 eggs
1/2 cup almond milk
2 tsp dijon mustard
salt & pepper to taste
Method:
Preheat oven to 350F
Heat pan on low-med heat
Add 1 tbsp avocado oil, let heat through, then add garlic
Let cook for approx 30 sec (just enough for garlic to become fragrant)
Add onion to pan, mix, then sauté for 3 min
Add peppers to pan, mix, then sauté for 2 min
Add spinach to pan, season with salt & pepper, mix, then sauté for 1 min
Remove from heat just as spinach begins to wilt.
In a large bowl combine the eggs, almond milk, dijon mustard, & salt & pepper to taste
Whisk until thoroughly mixed
Pour into pie pan that has been greased with remaining 1 tbsp of avocado oil
Add veggie sauté, then mix together for even distribution
Bake for 25 min
Remove from oven, let cool, & enjoy!
I like to serve over sautéed kale & drizzle with a little balsamic & EVOO.
