CRUSTLESS VEGGIE QUICHE

Ingredients:

  • 2 tbsp avocado oil

  • 1 med onion (diced)

  • 3 cloves garlic (minced)

  • 5 small sweet peppers or 1/2 bell pepper (diced)

  • 5 oz spinach (chopped)

  • 6 eggs

  • 1/2 cup almond milk

  • 2 tsp dijon mustard

  • salt & pepper to taste

Method:

  1. Preheat oven to 350F

  2. Heat pan on low-med heat

  3. Add 1 tbsp avocado oil, let heat through, then add garlic

  4. Let cook for approx 30 sec (just enough for garlic to become fragrant)

  5. Add onion to pan, mix, then sauté for 3 min

  6. Add peppers to pan, mix, then sauté for 2 min

  7. Add spinach to pan, season with salt & pepper, mix, then sauté for 1 min

  8. Remove from heat just as spinach begins to wilt.

  9. In a large bowl combine the eggs, almond milk, dijon mustard, & salt & pepper to taste

  10. Whisk until thoroughly mixed

  11. Pour into pie pan that has been greased with remaining 1 tbsp of avocado oil

  12. Add veggie sauté, then mix together for even distribution

  13. Bake for 25 min

  14. Remove from oven, let cool, & enjoy!

I like to serve over sautéed kale & drizzle with a little balsamic & EVOO.
