Gluten-Free Gingerbread Muffins

Ingredients:

  • 1 1/2 c GF baking flour

  • 2 tbsp chia seeds

  • 2 tbsp ground flaxseed

  • 1 tsp baking soda

  • 1 1/2 tsp ground cinnamon

  • 1 1/4 tsp ground ginger

  • 1/2 tsp ground cloves

  • 3 eggs

  • 1 banana (mashed)

  • 1 tsp vanilla extract

  • 2/3 c maple syrup

  • 1/4 c coconut oil

  • handful walnuts (crushed & optional)

Method:

  1. Preheat oven to 350f and line muffin tin with baking cups

  2. In a large mixing bowl add dry ingredients (except walnuts) together and mix

  3. In a small mixing bowl add wet ingredients (including banana) together and mix until smooth

  4. Add wet ingredients to dry and mix well to combine

  5. Scoop mixture into muffin tins and top each with a scoop of walnuts

  6. Bake for 30 min.

  7. Let cool and enjoy!
