GRASS-FED BEEF CHILI
Ingredients:
1 lb. grass-fed beef
1 onion (diced)
2 tbsp chili powder
2 tbsp ground cumin
1 tsp garlic powder
1 14oz can fire-roasted diced tomatoes
1 15oz can tomato sauce
1 6oz can tomato paste
2 1/2 cups beef or vegetable broth
1 tsp apple cider vinegar
1 15oz can kidney beans
1 15oz can pinto beans
1 15oz can black beans
1/2 tsp salt
1/2 tsp pepper
Method:
Heat pot on low-med heat
Add oil to pot & allow to heat through
Add onions to pot & sauté for 5 min. stirring occasionally
Add ground beef to pot & stir/crumble as it cooks through
Add chili powder, cumin, & garlic powder & stir to mix together
Add diced tomato, tomato sauce & paste, broth, & apple cider vinegar. Stir to mix through
Simmer uncovered for 25 min. stirring occasionally
Add beans, salt, & pepper. Stir to mix & simmer for an additional 5 min.
Turn off heat, let cool, & serve w/ desired toppings.
*I suggest my vegan sour cream, cilantro, & pickled onions!
