GRASS-FED BEEF CHILI

Ingredients:

  • 1 lb. grass-fed beef

  • 1 onion (diced)

  • 2 tbsp chili powder

  • 2 tbsp ground cumin

  • 1 tsp garlic powder

  • 1 14oz can fire-roasted diced tomatoes

  • 1 15oz can tomato sauce

  • 1 6oz can tomato paste

  • 2 1/2 cups beef or vegetable broth

  • 1 tsp apple cider vinegar

  • 1 15oz can kidney beans

  • 1 15oz can pinto beans

  • 1 15oz can black beans

  • 1/2 tsp salt

  • 1/2 tsp pepper

Method:

  1. Heat pot on low-med heat

  2. Add oil to pot & allow to heat through

  3. Add onions to pot & sauté for 5 min. stirring occasionally

  4. Add ground beef to pot & stir/crumble as it cooks through

  5. Add chili powder, cumin, & garlic powder & stir to mix together

  6. Add diced tomato, tomato sauce & paste, broth, & apple cider vinegar. Stir to mix through

  7. Simmer uncovered for 25 min. stirring occasionally

  8. Add beans, salt, & pepper. Stir to mix & simmer for an additional 5 min.

  9. Turn off heat, let cool, & serve w/ desired toppings.

*I suggest my vegan sour cream, cilantro, & pickled onions!
