Ingredients:
1 tbsp olive oil
3 cloves garlic
1/2 red onion (diced)
1/4 cup chickpeas (rinsed & drained)
6 cherry tomatoes (halved)
6 castelvetrano olives (diced)
handful spinach (finely chopped)
3 sprigs fresh dill (chopped)
3 eggs
1/2 tsp salt
1/2 tsp Za’atar seasoning
pinch of red pepper flakes (optional)
Method:
In a small bowl, crack eggs & whisk together with Za’atar seasoning & 1/4 tsp salt , then set aside
Heat pan on low heat & allow to heat through
Add oil to pan & allow to heat through
Add garlic & saute until fragrant, about 30 sec.
Then add onions & saute for 3-5 min.
Then add peppers & saute for 3 min.
Then add chickpeas, tomatoes, remaining salt, & saute for 3 min
Add olives & spinach & saute until spinach starts to wilt, about 1 min
Add dill & mix
Lastly, add eggs to vegetable mixture & scramble until desired doneness
Serve, let cool, & enjoy!
