Ingredients:

  • 1 tbsp olive oil

  • 3 cloves garlic

  • 1/2 red onion (diced)

  • 1/4 cup chickpeas (rinsed & drained)

  • 6 cherry tomatoes (halved)

  • 6 castelvetrano olives (diced)

  • handful spinach (finely chopped)

  • 3 sprigs fresh dill (chopped)

  • 3 eggs

  • 1/2 tsp salt

  • 1/2 tsp Za’atar seasoning

  • pinch of red pepper flakes (optional)

Method:

  1. In a small bowl, crack eggs & whisk together with Za’atar seasoning & 1/4 tsp salt , then set aside

  2. Heat pan on low heat & allow to heat through

  3. Add oil to pan & allow to heat through

  4. Add garlic & saute until fragrant, about 30 sec.

  5. Then add onions & saute for 3-5 min.

  6. Then add peppers & saute for 3 min.

  7. Then add chickpeas, tomatoes, remaining salt, & saute for 3 min

  8. Add olives & spinach & saute until spinach starts to wilt, about 1 min

  9. Add dill & mix

  10. Lastly, add eggs to vegetable mixture & scramble until desired doneness

  11. Serve, let cool, & enjoy!
