Inside-Out Egg Roll

4 Servings

Ingredients:

  • 1 tbsp toasted sesame oil (can also use avocado)

  • 1 yellow onion (diced)

  • 2 tsp grated fresh ginger (or 1 tsp ground ginger)

  • 4 garlic cloves (minced)

  • 1 lb. ground chicken or turkey, depending on preference

  • 2 large carrots (grated)

  • 2 cups green cabbage (thinly sliced)

  • 1/4 cup coconut aminos

  • 1 tbsp rice wine vinegar

  • sprinkle with black sesame seeds

Method:

  1. Heat large pot or pan with tall sides on low-med., allow to heat through, then add oil and allow to heat through

  2. Saute onions for 5-7 min. until softened, then add garlic and ginger, stir to mix, and saute for 1 min.

  3. Next add ground meat and saute for 5 min. or until meat is cooked through. Break up meat with wooden spoon as you go.

  4. Push meat to one side of pan and add carrots and cabbage. Saute for 3-4 min. or until vegetables are softened and stir to mix together with meat.

  5. Saute for 1 more min. then add rice wine vinegar and coconut aminos. Stir to mix to ensure sauce is evenly distributed

  6. Scoop egg roll into bowls, top with sesame seeds, let cool, and enjoy!

Option 1: top with scrambled egg.

Option 2: serve with steamed rice.
