Lemon-Herb Turkey & Chickpea Stew
Ingredients:
2 tbsp olive oil
1 yellow onion (diced)
2 carrots (grated or finely chopped)
4 cloves garlic (minced)
2 tbsp tomato paste
1 1/2 tbsp ground cumin
1 1/2 tsp ground turmeric
1/2 tsp salt
1/8 tsp red pepper flakes (optional)
1 lb. ground turkey
6 cups chicken broth
1 can chickpeas (drained & rinsed)
handful chopped arugula
handful chopped basil
squeeze of fresh lemon juice to serve
Method:
Heat large pot or dutch oven on low-med. heat, allow to heat through, all oil to pan, and allow to eat through
Place onions in pan & saute for 5 min. until soft & beginning to brown
Then add carrots & garlic & saute for 2-3 min.
Add tomato paste, cumin, turmeric, & 1/4 tsp salt (add red pepper flakes here if using), then stir to mix thoroughly
Add ground turkey to pot, break up meat w/ wooden spoon & cook through, about 5 min.
Then add broth & chickpeas & bring stew to a simmer
Add remaining 1/4 tsp salt, stir, cover pot, and simmer for 20 min.
While stew is cooking chop arugula & basil for serving
Ladle stew into bowls, top w/ greens & squeeze of lemon, let cool, & enjoy!
