PISTACHIO CRUSTED HALIBUT

Ingredients:

  • 3/4 lb halibut filet

  • 1/2 tsp olive oil

  • 1 tbsp mayo

  • 1 cup salted/roasted pistachios

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 handful chives

  • salt to taste

Method:

  1. Preheat oven to 425f

  2. Line pan with parchment paper

  3. Place fish filet on pan & pat dry with paper towel

  4. Drizzle filet with olive oil, season with salt, & brush with a thin layer of mayo

  5. In a food processor, place pistachios, chives, & garlic & onion powder. Pulse until pistachios are ground down & mixture is well combined.

  6. Pour mixture onto a plate, then press the mayo side of the filet into the pistachio mixture until it is fully coated

  7. Place fish back on pan & bake for 15 minutes. Fish should be 145f internally.

  8. Let cool & enjoy!
