PISTACHIO CRUSTED HALIBUT
Ingredients:
3/4 lb halibut filet
1/2 tsp olive oil
1 tbsp mayo
1 cup salted/roasted pistachios
1/2 tsp onion powder
1/2 tsp garlic powder
1 handful chives
salt to taste
Method:
Preheat oven to 425f
Line pan with parchment paper
Place fish filet on pan & pat dry with paper towel
Drizzle filet with olive oil, season with salt, & brush with a thin layer of mayo
In a food processor, place pistachios, chives, & garlic & onion powder. Pulse until pistachios are ground down & mixture is well combined.
Pour mixture onto a plate, then press the mayo side of the filet into the pistachio mixture until it is fully coated
Place fish back on pan & bake for 15 minutes. Fish should be 145f internally.
