Sauteed Artichokes

Ingredients:

  • 1 can quartered artichokes (drained)

  • 3 tbsp avocado oil

  • 1/4 tsp salt

  • 2 cloves garlic (minced)

  • juice of 1/2 lemon

  • handful parsley (chopped)

Method:

  1. Head medium-sized pan on low-med heat, allow to heat through, then add 2 tbsp oil and allow to heat through

  2. Add artichokes to pan, place face down and saute fo 7 min. or until they are browned

  3. Salt, then flip artichokes over and saute for another 7 min. until browned, then add remaining oil to pan, then garlic

  4. Saute for 2 minutes, stirring so garlic doesn’t burn

  5. Remove from pan, squeeze with lemon and top with parsley

  6. Let cool & enjoy!
