SAUTEED GARLIC KALE W/ LEMON

Ingredients:

  • 1 bunch lacinato (dino) kale

  • 1 tbsp avocado oil

  • 2 cloves garlic (minced)

  • 1-2 tbsp water

  • 1/2 lemon

  • salt & pepper to taste

Method:

  1. Rinse, dry, & slice kale into ribbons

  2. Heat pan on low-med heat

  3. Add oil to pan, let heat through, then add garlic

  4. Let cook for approx 30 sec (just enough for garlic to become fragrant)

  5. Add kale to pan & mix through

  6. Add 1 tbsp water to steam kale & avoid burning the garlic (after a few min can add 1 more tbsp of water if necessary)

  7. As kale cooks down season with salt & pepper & continue to mix for even cooking

  8. Once cooked through (approx. 2 min.), turn off heat & squeeze juice of 1/2 lemon on top

  9. Let cool & enjoy!
