SHRIMP & TOMATOES OVER PALMINI

Ingredients:

  • 1 dozen shrimp (peeled & deveined)

  • 1 24oz container cherry tomatoes (halved)

  • 1 package palmini linguini

  • 4 tbsp avocado or olive oil

  • 1/2 tbsp garlic powder

  • 1/2 tbsp onion powder

  • salt & pepper to taste

  • juice of half a lemon

Method:

  1. Season shrimp w/ garlic & onion powder & salt & pepper then mix with hands to evenly coat

  2. Heat 2 pans on low-med heat

  3. Once heated through add 2 tbsp oil to each and let oil heat through

  4. In one pan add tomatoes, season w/ salt & pepper & let cook down for 10 min., stirring occasionally

  5. In other pan add shrimp & cook for 3 min. on each side (until they are perfectly pink)

  6. When the shrimp are done remove from pan & throw in palmini

  7. Season w/ salt & pepper & sauté for 5 min.

  8. Once Palmini is cooked through, plate, & top with tomato sauce & shrimp

  9. Squeeze juice of lemon over servings

  10. Let cool & enjoy!
