Spicy Shrimp in Turmeric Stew
Ingredients:
1 dozen shrimp
3 tbsp avocado oil
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 yellow onion (diced)
1 thumb ginger (about 2 tbsp, minced)
4 cloves garlic (minced)
2 stalks celery (diced)
1 carrot (finely chopped)
1 tsp ground turmeric
1 can coconut milk (full fat)
2 cups chicken broth
1 small Cocojune coconut yogurt (or similar)
handful mint (chopped)
handful cilantro (chopped)
juice of 1 lime (1/2 for each bowl)
Method:
Pat shrimp dry, drizzle w/ 1 tbsp oil & season w/ 1/4 tsp salt, garlic, & onion powder then mix w/ hands to evenly coat
Heat a large pot on low-med. heat, allow to heat through, add the remaining oil, & allow to heat through
Saute onions & garlic for 5 min until softened, then add ginger, celery, & carrot, then saute for another 5 min.
Season w/ turmeric & remaining salt & stir to mix
Add in coconut milk & chicken broth and stir to mix
Bring to a simmer & cook for 15 min
Add shrimp & cook for 5 min.
Scoop stew into bowl, top w/ coconut yogurt, mint, cilantro, & a squeeze of lime
Let cool & enjoy!
