Turkey & Sweet Potato Meatballs

18-20 Golf Ball Sized Meatballs

Ingredients:

  • 2 tbsp. salt

  • 1 medium sweet potato (peeled)

  • 1 lb. ground turkey (mixed light & dark meat is best)

  • 1/4 cup paleo powder AIP blend

Method:

  1. Preheat oven to 400f and line a large baking sheet with parchment paper

  2. Bring medium pot of water to a boil with 2 tbsp. salt. Once boiling place peeled sweet potato into pot and boil for 15 min.

  3. Once cooked through, drain sweet potato and let cool for 10 min.

  4. In large mixing bowl, place ground turkey, sweet potato, and paleo powder then mix well with hands to combine

  5. Roll approximately a golf ball sized meat ball into your hands until round and repeat until all of mixture has ben used

  6. Bake for 14 min. or until internal temp. reaches 165f

  7. Let cool & enjoy!

Pairs perfectly with bone broth rice or a simple side salad!
