VEGAN PESTO

Ingredients:

  • 1 cup high-quality extra virgin olive oil

  • 5 cloves garlic

  • 3 cups fresh basil

  • 1/2 cup pine nuts

  • 2 tbsp nutritional yeast

  • 1/2 tsp salt

  • juice of 1 lemon

Method:

  1. Place all ingredients together in a blender or kitchen mixer

  2. Blend together

Serve over pasta or use as a sauce on fish, shrimp, or turkey meatballs.
